Single rise Peasant Bread

For my birthday, I got a new KitchenAid Mixer and this is my favorite bread making recipe. It is rather easy and yummy.

Ingredients

  • 4 cups of unbleached all-purpose flour
  • 2 teaspoons kosher salt
  • 2 cups lukewarm water (mix 1.5 cups cold water with 0.5 cup boiling water)
  • 2 teaspoons suger
  • 2 teaspoons instant or active-dry yeast
  • cooking spray

Prepare the Yeast

Mix the sugar, yeast, and lukewarm water in a large bowl.

Look for the yeast to start blooming as it rises to the top of the water.

Start Mixing

Add the salt and start mixing all four cups of flower into the yeast and water. The dough should be stiff enough to temporarily hold the indent from a finger poke.

Let it rise

Spray the bread-pan or Pyrex bowl with the cooking spray. place the dough into the pan or bowl and cover with plastic wrap. Let this rise for at least one hour in a warm place. The dough should double in size.

Baking time

Preheat the oven to 425ºF. Bake to the beard for 15 minutes, then reduce the heat to 375ºF. Bake for another 15 to 17 minutes or until the loaves have a golden brown crust.

Eat it up

Let the loaves cool on a wire rack for at least 10 min. Cut it up and enjoy.
